Nothing from further than the coastline can see

We built the kitchen around a single rule: if it didn't grow, swim, or graze within reach of the fjord, it doesn't reach the table. That means a shorter menu, and a longer relationship with the seven foragers, two fishermen, and one dairy we work with.

01
Foraged, not flown in
Herbs and mushrooms picked the same morning by our forager, Ingrid.
02
Preserved, not wasted
Summer's surplus becomes winter's pickle, ferment, and cure.
03
Open kitchen, open book
Ask where anything came from — we'll usually know the farmer's name.
The room

Twenty-four seats, one long table by the window

Spruce floors, linen the colour of birch bark, and a pass you can watch from every seat in the room. We kept it small on purpose — everyone gets the same view of the kitchen.
